It's a Celebration Bitches.....




With another school year coming to completion and summer poking its head through the clouds, I thought a tip on the celebration bubble this week would be nice. Champagne has always been the token accompaniment to any party, birthday, wedding, graduation or milestone but champagne or sparkling wine is always a refreshing start to any evening. 


Champagne is a sparkling wine produced by inducing the in-bottle secondary fermentation of wine to effect carbonation. It is produced exclusively within the Champagne region of France, from which it takes its name. While the term "champagne" is used by some makers of sparkling wine in other parts of the world including B.C. Numerous countries limit the use of the term to only those wines that come from the Champagne appellation.


My top three Champers that are 'Popinov' right now are...





Of course Moet & Chandon Dom Perignon tops the list. Save this one for a very special occasion, it comes in at a little over $200 a bottle.





Next, try the Veuve Clicquot Ponsardin 98/99. At just over $80 a pop, this bub fits the palette and the wallet.





Finally, I recommend the Nicolas Feuillatte Grand Cru '97. At the same price as the Veuve, this bad boy brings a great food pairing element. Try fresh crab cakes or raw oysters with yours.






Also for the 'diamond in the ruff' pick I chose to go local.  B.C. is producing some amazing sparkling wines right now.  You can't really go wrong with most of them but the Cipes Brut is one of the best in my opinion.


The Summerhill specialty and possibly Canada's most critically acclaimed wine; the Cipes Brut is a beautiful Riesling based method traditionel sparkling wine with aromas of apple, lime, pear, almonds and grapefruit. On the palate Cipes Brut exhibits crisp acidity, a soft, creamy mousse with a long finish and flavours of citrus, pear, apple, almonds and yeast.
